Mini Egg Trifle

Easter is sneaking up on us! Just under 2 weeks away. That means it time for some Easter desserts!

Trifles are on the top of my list when it comes to easy desserts. And the best part is that you can make them with anything: cake, brownies, fruit, chocolate bars, cookies…

…so I thought, why not try mini eggs! It would make the perfect Easter themed dessert.

Here’s what you need:

|| Double batch of brownies (prepared) || Chocolate pudding (prepared) || Whipping cream || 1 cup of Cream Cheese ||10 Oreo Cookies || 2-3 cups of Mini eggs ||

Prepare your brownies and pudding.

Let the pudding set in the fridge and the brownies cool.

Once your pudding is set, mix in the cup of cream cheese, so that it is fully combined, then mix in the 10 oreos (crushed). You’ll end up with a rich and creamy oreo pudding mixture.

Whip up your whipping cream. Crush 1.5 -2 cups of mini eggs into smaller pieces.

That’s it!

Time to assemble.

Layer the brownie, pudding, crushed mini eggs and whipping cream until you reach the top of your trifle dish.

Ending with the whipping cream and top with the leftover whole mini eggs.

Mmmmmm! This is the BEST dessert! The cream cheese cuts out a bit of the ‘richness’ of all the chocolate, but this will definitely satisfy any sweet-tooth out there!

Not to mention it is literally the easiest dessert to make; and with it being SO GOOD I promise you it will disappear quickly!

The trifle should keep well in the fridge for a few days, but I can’t tell you from experience beyond day two… because it never lasts that long… πŸ™‚

Friday Favorites: A Week of Goodies

Another week has flown by, and we are coming close to Valentine’s Day!!!

This weekend is going to be extra great because not only is Sunday Valentine’s Day but Monday is a holiday!

YAY for long weekends πŸ™‚ I love having an extra day to sleep in, be lazy, and rest.

Well.

This week has been a week of sugar overload let me tell you! There has been cookies, chocolate, pie, and all other sorts of sweet treats. For this ‘Friday Favorites’ I’m sharing some of my favorite treats from the week.

It is always a highlight when this pie makes an appearance at work πŸ™‚

Have you ever had peanut butter pie? If you haven’t you are missing out!! This stuff is THE BEST. The first time this pie was brought into work I knew I had to find my own recipe, and I found one that is pretty spot on. I could eat this pie for every meal!! So good!

I’ve been working away at the dish of chocolate kisses we have at home… and the chocolate hearts…. and jelly beans…

I found these ‘xoxo’ cookies at the grocery store. My nephew got one of these for a Valentine treat! I think they are super cute!!

Fruit did make it one the list of treats this week! I love berries, and it is always a treat to have them when they aren’t in season. I can’t wait till summer for all the fresh fruit!

And last but not least are the Chocolate Chip Cookies I made earlier in the week. My husband and I have been using them as an after work snack. YUM!

I think next week will have to be a week of vegetables to even things out!!

A Sweet Treat For Your Tuesday: Sugar Cookie Donuts

imageI love cookies. I love donuts. I love donut shaped cookies!!

Here is a simple sugar cookie recipe that does not require any ‘chilling’.

YAY for quick and easy cookies that taste amazing!

A good sugar cookie recipe is a MUST, you can use it for everything, Christmas, Valentine’s day, or any occasion that requires some cookie decorating!

You know its a good recipe when you try yummy cookies and ask for the recipe! That’s how I got this one! Turns this is the sugar cookie recipe off of the back of the Wilton cookie cutters! It’s a winner of a recipe πŸ™‚

These classic cookies have all your regular ingredients, sugar, flour, butter, 1 egg, etc.

Here’s the recipe:

Mix all of your ingredients according to the recipe, roll your dough and cut out the cookies.

You could choose any shape for your cookies, hearts, circles, stars, anything! I went with donut shape πŸ™‚ And I think they turned out pretty cute!

With a little bit of icing, a few sprinkles you have yourself some donut cookies!!

A Sweet Treat For Your Tuesday: Strawberry White Chocolate Chip Cookies

imageHappy Tuesday!!

Ready for a bit of pink!?!

Valentines Day is coming up next month, and these would make the perfect Valentines Day treat… but in the meantime you can’t go wrong with a pink cookie even in January!!

These are the simplest cookies to make. 4 Ingredients. That’s it!

1 box of strawberry cake mix | 1 egg | 1/4 cup melted butter | 1 cup white chocolate chips |

Mix the 1/4 cup of melted butter, egg, and strawberry cake mix together. Add 1 cup of white chocolate chips. And you are done!! Scoop and bake for 7-10 minutes. The cookies will be puffed up coming out of the oven and then flatten a bit as they cool.

And are they ever good!!! Melt in your mouth!

The strawberry and white chocolate go together perfectly. Believe me, its hard not to gobble up a few too many of these cookies!

These cookies stay soft and chewy even days after they were baked. That is one good cookie πŸ™‚

A Sweet Treat for Your Tuesday: French Vanilla Coffee Creamer

imageIt’s Tuesday!! Does anyone else lose track of the days between Christmas and New Years?

Around here Tuesday normally means some sort of cookies, cake or treat.

Well… we currently have an abundance of baked goodies around our home! And on-top of that we have atleast 6 boxes of chocolates…which means… there is no need to add to all the desserts, considering how many we already have… so instead I’m sharing this super simpleΒ  DIY Vanilla Coffee Creamer to sweeten up your morning coffee.

With vacation days between Christmas and New Years, I love to take an extra few minutes to enjoy a good cup of coffee. And I am a huge fan of these DIY coffee creamers!

I made some peppermint chocolate coffee creamer just before Christmas and we thoroughly enjoyed it; drinking every last drop! So, its time for some more!! And why not go for classic vanilla?!

This recipe is by far the simplest out of the other DIY coffee creamers I’ve shared… and tastes amazing!

Here’s how you make this French Vanilla Creamer:
