Two years ago we were saying ‘I do’ in this beautiful Church!!

This wonderful guy has made these past 2 years chalked full of laughter, adventures, fun and enjoyment even in the mundane, relaxing quiet evenings filled with long conversation, excitement for what the future hold, and endless love and encouragement.

God has blessed me with an incredible Husband!!

Elf on the Shelf: Spouse Edition (Week 1)

Do the weekends ever fly by in December or what?!

I can’t believe we are already on our second week of December! Baking has commenced, decorations are basically up and Christmas music is playing 24/7!

Last week I introduced my version of Elf on the Shelf… Spouse Edition!! And promised to share a bit of what my elf has been up to over the past week each Monday. So here is the first update!

Once again, here was the introduction to my Elf, and the surprises to come this next month!


I love ‘pun’ ideas for leaving little treats and notes around for my husband, there are SO many idea’s out there ๐Ÿ™‚ All I’ve had to is add a Christmas twist! Or include some sort of treat that my husband likes!


I’ve had to be sneaky and try to set things up either when I get home from work before my husband or when he’s not looking!!!

Elf of the Shelf: Spouse Edition

25Continuing the Christmas count down, we’re at 25 days!!!

And tomorrow is the first day of December, which means my blog is officially becoming Christmas central!

Now, Mondays have usually been ‘Simple Meal Mondays’ but because of the Christmas season, Mondays are taking a Holiday twist.

You’ve probably heard about Elf on the Shelf… well here is my version!

Meet my elf!


This elf will be making its first appearance December 1, but here is a sneak peak ๐Ÿ™‚

I found this elfย  ‘ornament’ at a craft store and the best part is that you can insert a picture of your face! This ornament makes the perfect elf for my elf on the shelf, and its bound to get a few laughs from my husband!!


I’ve prepped some date night ideas and other surprises for my husband as a Christmas count down throughout December and each Monday I’ll share a post with an update on what my elf on the shelf has been up to!!

Simple Meal Monday: Black Bean and Turkey Mexican Rice

I had a crazy busy weekend, but so fun; wedding dress shopping with a friend on Saturday and Sunday we unpacked our Christmas decorations and put up our tree!! YAY!

Simple meals are always great, especially for those busy days. So, here is a quick and easy recipe that I used this past weekend amidst the busyness.

This black bean and turkey Mexican rice is simple but makes super good meal!

Here is what you need:

  • 1 small package of ground turkey or beef
  • 1 package or fajita or taco mix
  • 1 can of black beans
  • 1 can of diced tomatoes (I used one with Italian spices already in it)
  • 1 cup of rice
  • 2 cups of chicken stock
  • 2 onions
  • 2 tsp of garlic powder
  • 1/2 cup of grated cheese
  • Sour cream or salsa for a topping

Start by making your rice. Bring your chicken stock to a boil and add in your rice, cover and turn on low.

In another pot, brown the turkey with the onions (diced) and garlic powder. Once your turkey is cooked mix in the fajita mix, beans, and tomatoes.

Finally add the cooked rice into your turkey mix, top with the cheese and cover for a few minutes so that the cheese can melt.


Done!! Top with sour cream or salsa and enjoy ๐Ÿ™‚
